Banana Split Cupcake

I found these cupcakes on another cooking blog and thought I'd try my own version of them. They turned out so great! A fluffy banana cupcake with strawberries and pineapple filling, topped with delicious buttercream frosting, sprinkles, chocolate and a cherry. These cupcakes are perfect for summer parties that kids and adults will all love!

Mac and Cheese "Cupcakes"

Ok, so I know these aren't really cupcakes and they're certainly not the kind I sell (for now anyway. But that's neither here nor there and a completely different topic). I made these last night to go with dinner as a trial run for a possible menu item for my son's birthday party coming up in August. So how did the trial run go? Amazingly! They were such a hit--my husband, 4 year old, (almost) 2 year old--we all loved them! I can't wait to make them again!

Coconut Cupcakes

I decided I wanted to fine tune my coconut cupcake tonight. I thought using coconut milk instead of regular milk would be a good idea...and I was right! They turned out wonderfully! I'm especially pleased with the frosting--To. Die. For. These are absolutely heavenly. I really hope my husband eats them all soon so that I'm not tempted to finish them off myself.

Pancake Cupcake

It's been a while since I've posted anything and I have a very good reason. Well, two very good reasons: I had a baby and we moved into a new house! I'm finally back in the kitchen and ready to dive into this cupcake thing full-force! Here's my recent creation...

I know this sounds like a really weird cupcake, but it's actually REALLY good! A light, fluffy buttermilk pancake cupcake topped with a wonderful maple butter cream frosting and sprinkled with bacon crumbles (well, I used turkey bacon since I don't eat red meat)...SO GOOD! It's a great combination of sweet and salty!

And for all of you that are thinking, "Eww, gross!" let me ask you this: Do you eat honey-baked ham? Haven't you ever accidentally gotten syrup on your bacon?

That's what I thought.  :)

Lemon Cupcakes

Lemon desserts have to be my all-time favorite. There's something about the tangy and sweet combination that I just love! Naturally, I wanted to make a delicious lemon cupcake for all of those lemon lovers out there just like me. This cupcake is fluffy, sweet, and lemon-y. The frosting: Lemon Cream Cheese. To. Die. For.

Blueberry Cream Cheese Cupcakes!

I was in the mood last night to experiment with new cupcake flavors so I asked my husband if he had any suggestions. His answer: a blueberry cupcake. My mission was to make it light and fluffy like a cupcake is supposed to be, not heavy and dense like a muffin. The result? A light, fluffy (and very blue!) cupcake topped with rich, cream cheese icing. Delish!

Mission: Accomplished!

Lavender Cupcake: Battle of the Buttercream

After much deliberation from the judges, the winner of the Buttercream War is....Lavender!!! It was a close call, but in the end, lavender came out on top. )Sorry, Cream Cheese. As yummy as you are, the lavender cupcake is better off with lavender cream cheese buttercream.)

Cadbury Creme Cupcakes!

Today, my sister-in-law suggested I try to make a Cadbury Creme-filled cupcake since Easter is just around the corner. I thought it was a great idea, but had no idea just HOW great it was until they were finished. I used my delicious chocolate cupcake and filled it with the famous Creme filling (I found the recipe online) and topped it with my rich, chocolate buttercream frosting. All I can say is: Oh. Em. Gee. They are very rich (in keeping with the uber-sweetness of the famous Cadbury Creme Eggs), but VERY good! Happy (early) Easter to everyone!

     

And, I know, one of these days I'll get around to posting much better pictures. All of my photographer friends--don't judge! :)

I made a fresh batch of lavender cupcakes this morning! I put cream cheese buttercream frosting on half of them and a delicious cream cheese lavender (color and flavor) frosting on the other half. I'm so excited at how they turned out! Now to figure out which flavor combination I like best...

Green Velvet Cupcakes!

Ok, so I know I'm a little late with all of the "green" holidays that have already passed (Christmas, St. Patrick's Day), but my pregnancy brain just had the idea the other day to turn my delicious red velvet cupcakes into green ones! You see, I'm in the process of planning my son's birthday party for April and he decided he wanted a golf-themed party (the kid is a sports fanatic. No, really.) and I thought the green velvet cupcake idea would be SO CUTE! Top them off with my amazing cream cheese buttercream frosting and add some sort of golf-related decoration (I still need to narrow that down, but I just have so many ideas...) and, voila! Green Velvet cupcakes! I decided to do a quick test run (since not all colors work due to the cocoa in the recipe) and here's a quick glimpse at them. Oh, and they tasted wonderful!

Lavender Cupcake!

Today I tried a new lavender cupcake recipe (something I was a bit apprehensive to do) and I'm so excited about it! I tweeked an exisiting recipe I had for another flavor and the final result was great! Since lavender is such a delicate flavor, I didn't want to use too much of it and get a soapy, "tastes-like-lotion" kind of cupcake, but I also wanted there to enough of the flavor to be able to recognize. The final result: An amazingly sweet, lavender cupcake that is so yummy! Since it's such a unique flavor (and floral-y), I think it's something that you'll either love or hate...but I think most people will love it! It's got just the right amount of lavender to go with the sweet, vanilla cake. My husband actually said it's one of his all-time favorite of my cupcake recipes! (And I thought he wouldn't like it all since he's such a traditional cupcake kind of guy. Ha!) I would have had a picture to post, but I made such a small batch that they all got eaten (thanks to our little 4 year old crumb snatcher) before I could take one! I guess I know what I'll be doing in the near future and I'll post the picture as soon as I can!
